Vanilla Chia Seed Pudding
Easy, easy, easy breakfast on the go. Because chia seeds are loaded with healthy omega-3 fatty acids, dietary fiber, and antioxidants, this is a great go-to when you're out of the house first thing in the morning.
1/4 cup of Chia Seeds (I use Nutiva and you can get it in bulk at Costco)
1 cup of almond or coconut milk
1/4 tsp of vanilla
3 tbs of Nutiva coconut sugar (it looks like brown sugar but tastes like caramel, it's so good!)
Put all the ingredients in a mason jar and make sure you put a lid on it. Leave it in the refrigerator overnight then in the morning put toppings on!
I usually add on strawberries, blueberries, bananas, nuts, mango, greek yogurt or honey.
